Spring Cupcakes from scratch

For the "grass" we colored coconut. 1/2 c. coconut and 5 drops of green food coloring. Mix until coconut is mostly green. 
Because it was Easter time we had Peeps and Jelly Beans on hand. Seemed logical to use them.
The frosting is the standard butter cream recipe that we make at home. But you can use whatever frosting you like best.
My mom was always one for making things from scratch. So was my dad. We hardly ever ate store bought goodies while I was growing up and Im happy to say Im doing the same thing with my kids! I like to be able to pronounce whats on and in our food. Except for the Peeps and Jelly Beans. Im too afraid to know whats in them! They taste too good to want to know!
